For these Banana Bread Bars recipe you'll need: bananas, flour, butter, brown sugar, vanilla, rum, eggs, salt, baking powder and powdered sugar.
Preheat oven to 350°F, spray 8x8 pan with nonstick cooking spray. Whisk melted butter and brown sugar together then stir in eggs one at a time.
Mash bananas in a bowl so the banana cake as a smooth and consistent texture and flavor.
Fold mashed bananas into the egg and butter mixture. Fold just until combined.
Whisk all dry ingredients together in a medium sized mixing bowl. Whisk well to combine.
Fold dry ingredients into wet banana bread bar batter. Fold just until flour is no longer visible. Do not overmix.
Bake the banana cake for 30 minutes or until a toothpick comes out of the center clean or with only a few crumbs.
Make brown butter frosting while banana cake cools. Once fully cooled, frost the banana bars.
Cut the banana bread bars with brown butter frosting into squares. Garnish with fresh sliced bananas if desired.
