For the Best Molasses Cookie recipe you'll need: sugar, brown sugar, molasses, flour cinnamon, ginger, cloves, dry mustard, salt, baking soda, eggs, and shortening.
Cream both sugars and shortening together in the bowl of a stand mixer fitted with the paddle attachment.
Add egg and molasses to cookie batter. Mix until fully combined.
Whisk dry ingredients together in a large mixing bowl then add to molasses cookie dough batter, mixing on low speed just until combined.
Scoop cookie dough into balls, roll them until smooth in your hand then roll them in demerara sugar or brown sugar. Chill for 30-60 minutes.
Bake Cookies for 13-15 minutes at 350°F. Allow cookies to cool 2 minutes before transferring to a cooling rack.
