Birria Quesadillas

For this recipe you'll need: chiles, spices, chicken stock, salt, beef chuck, olive oil, onion, garlic, corn, peppers, lemon & lime juice, tortillas, cheese.


Toast chiles in a pan then add all remaining sauce ingredients and  let simmer. Put into a blender and blend until smooth.

Make the Sauce

Sear the beef then add onion and garlic, stir to combine. Pour the sauce over top. Bring to a boil then lower to a simmer and cook for 2-2 1/2 hours.

Make the Birria

Roast the peppers for 25 minutes. Dice peppers then add them to a medium bowl with all the remaining ingredients and mix well. Set aside until needed.

Make the Corn Salsa

On a tortilla, sprinkle with cheese, birria beef, and with more cheese. Fold in half and then pan fry until golden and the cheese has melted.

Make the Quesadillas

Serve the quesadillas with corn salsa, lime wedges and a side of broth (the best part!) from the pot. If broth is too thick, you can thin it out with a little water.
