Cheesecake Cookies

cheesecake Cookies are one of my favorite cookie recipes to make! Put your favorite fruit filling in from strawberry to blueberry to raspberry cheesecake cookies!

Strawberry Cheesecake Cookies include the following ingredients: flour, graham cracker crumbs, strawberry compote, freeze dried strawberries, eggs, cream cheese butter and sugar.

Ingredients

Start by making strawberry compote and allowing to cool slightly. Compote can be made up to 5 days in advance and stored in the fridge.

Make Strawberry Compote

Start by making the cookie dough batter. Mix wet ingredients in a large bowl, batter will be thick but sticky.

How To Make Cheesecake Cookies

Add dry ingredients to cheesecake cookie batter. Mixture will thicken up. Fold in freeze dried strawberries.

Cheesecake Cookies

Scoop cheesecake cookie dough into balls using a 3oz scoop. Line them on a sheet tray then chill for at least 4 hours and up to overnight.

Mix up cheesecake batter then set aside until needed. You will end up with a little leftover cheesecake batter.

Press down on each cheesecake cookie dough ball with the back of an ice cream scoop to form an indent.

Making Cheesecake Cookies

Fill each cookie with cheesecake batter then a dollop of strawberry compote or any fruit jam. Raspberry Cheesecake cookies are another favorite with raspberry!

Baking Cheesecake Cookies 

Serve Cheesecake Cookies after they have fully cooled. Strawberry Cheesecake Cookies can be stored in the fridge for up to 4 days.
