This lobster tail meal includes pasta with a white wine cream sauce, lobster tail meat, tarragon and confit tomatoes. Perfect for special occasions!
For this creamy lobster pasta recipe you'll need: lobster tails, pasta, shallots, lemon, garlic, butter, white wine, confit tomato, heavy cream and parmesan cheese.
First you'll need to confit your tomatoes. Add tomatoes, oil, garlic, herbs and salt to a high sided baking dish. Bake at 250°F for 2 hours.
Boil a pot of salted water. Add lobster tails then remove and shock in ice water. How long does it take to cook lobster tail? 3-4 minutes for 4oz tails.
Cook creste di gallo pasta according to package instructions. Do not overcook, make sure pasta is al dente.
Heat butter in a large skillet over medium heat. Add shallots and cook until translucent. Turn the heat down to low-medium and add spices. Deglaze pan with white wine. Stir in lobster water, pasta water and heavy cream. Let simmer 5 minutes. Add tomatoes from confit (just tomatoes, do not add oil) and lemon zest.
Place lobster tail on kitchen towel, fold other half of towel over the top. Push down until you hear cracking. Bend the tail backwards then pull out lobster meat.
Stir pasta and cut lobster tail meat into the creamy sauce. Serve this lobster tail meal with freshly grated parmesan reggiano and dill.
