Gingerbread Cream Pie is a no bake pie filling with molasses, ginger and warm spices. It's smooth, creamy and a super easy dessert to impress your guests with.
For this Gingerbread Pie recipe you'll need: Biscoff cookies, honey, cream cheese, heavy cream, cinnamon, ginger, butter, vanilla, molasses and spices.
Pulse biscoff cookies for pie crust then add melted butter and salt. Press cookie crust into the bottom of the gingerbread pie pan.
Beat the sweetened cream in a bowl until light and fluffy. It will be medium peaks. This gets mixed with cream cheese mixture.
Beat cream cheese along with gingerbread spices until light, fluffy and fully mixed. Fold in whipped cream to make easy gingerbread pie filling.
Evenly spread gingerbread cream pie filling into cookie crust. Chill gingerbread pie, ideally overnight.
Top Gingerbread Cream Pie with whipped cream then decorate with cinnamon, sugared cranberries, rosemary and gingerbread cookies.
