Hot Chocolate Cookies are some of my favorite Christmas cookies. Cocoa powder, semi sweet chocolate chips and marshmallow fluff topped with flaky sea salt.
For Hot Chocolate Cookies you'll need: flour, cocoa powder, salt, baking soda, vanilla, sugar, brown sugar, eggs, marshmallow fluff, butter and candy cane if you want to make Hot Chocolate Peppermint Cookies.
Mix the dry ingredients together in a large mixing bowl. Whisk ingredients until combined.
Preheat oven to 350°F then cream the butter, granulated sugar and brown sugar together in the bowl of a stand mixer fitted with the paddle attachment until light and fluffy.
Mix the cocoa powder into the hot chocolate cookie dough. Dough will be thick but not too stiff.
Fold marshmallow fluff into cookie dough. Leave streaks of marshmallow in the hot chocolate cookies to get bigger bites of marshmallow.
Scoop hot cocoa cookies into 2 inch balls. Top with a small amount of additional marshmallow fluff if desire. Chill dough.
Bake these Hot Chocolate Cookies for 8-10 minutes. Top with flaky sea salt. Top with crushed candy cane to make Hot Chocolate Peppermint Cookies.
