Creamy  Lemon Pie

For this recipe you'll need: butter cookies, butter, coconut, salt, extracts, eggs, condensed milk, lemon juice, heavy cream, powdered sugar.


Add all crust ingredients to food processor and blend until you have a small-fine crumb. Pour the mixture into the 9-inch pie pan and press into the bottom and sides. Bake the crust at 350 degrees F for 10 minutes or until golden brown. Set crust aside to cool on a wire rack

Make the Crust

Add all filling ingredients to a large mixing bowl and whisk until fully combined.

Make the Lemon Filling

Pour the filling into the cooled crust then bake for 25-30 minutes. Allow pie to cool on a wire rack for 30 minutes then transfer to the fridge for 8 hours or overnight


Pour all of the whipped cream ingredients into a medium mixing bowl and beat with a hand mixer on high speed until soft peaks are formed. Spread the whipped cream over the top of the lemon pie with an offset spatula or a spoon
