Lemon Ricotta Cookies are soft, a little bit chewy and bursting with lemon flavor. Ricotta cheese cookies are super moist!
For this Lemon Ricotta Cheese Cookies recipe you'll need: flour, baking soda, cornstarch, salt, lemon, egg, butter, sugar, ricotta, vanilla, cream cheese and powdered sugar.
Whisk dry ingredients together in a medium sized mixing bowl. Set aside until needed.
Cream the butter, sugar, ricotta and lemon zest until light and fluffy. This takes 3-4 minutes.
Mix in egg and lemon juice to lemon ricotta cookie mix. Fully mix the egg into the batter but do not overmix.
Slowly mix dry ingredients into wet, just until incorporated. Do not overmix. Lemon Ricotta Cheese Cookie dough should be soft.
Use a 2oz cookie scoop and scoop the ricotta cheese cookies onto a sheet tray. Chill dough for at least 2 hours and up to 48 hours.
Mix cream cheese for 2 minutes to make it soft and fluffy. Add remaining ingredients and blend another 2 mintues.
drizzle lemon cream cheese frosting over Lemon Ricotta Cookies once fully cooled. Enjoy!
