For these Old Fashioned Soft Molasses Cookies you'll need: shortening, brown sugar, granulated sugar, molasses, egg, salt, ginger, cinnamon, cloves, mustard, flour, white chocolate.
Mix the dry ingredients together in a large mixing bowl. Whisk ingredients until combined.
Preheat oven to 350°F then cream the shortening, granulated sugar and brown sugar together in the bowl of a stand mixer fitted with the paddle attachment until light and fluffy.
Mix in the egg and molasses. Just until smooth, no need to overmix.
Mix the dry ingredients into the wet ingredients just until combined. Do not overmix these old fashioned soft molasses cookies.
Roll these old fashioned soft molasses cookies in Demerara sugar or brown sugar, whichever you prefer. Chill dough 30 minutes.
Bake these Molasses Cookies with shortening for 13-15 minutes. Allow to cool on a wire rack. Dip the molasses cookies into white chocolate if desired.
I like to dip my soft molasses cookies in white chocolate. At the holidays I will add a little crushed candy cane too!
