Pork Steaks with Apple & Bourbon Cream

For this recipe you'll need: pork steaks, olive oil, shallots, carrots, apples, garlic, herbs, spices, chicken stock, apple cider, bourbon, mustard, heavy cream and lemon juice,

Ingredients

Heat a cast iron skillet and olive oil over high heat.  Sear seasoned pork steaks for 2 minutes then turn over and sear the second side for 2 minutes. Remove from the heat and place on a tray in the oven to keep warm

Sear the Steaks

Add the shallots, carrots, apples, garlic and thyme leaves to the pan and sauté until golden brown. Pour in the chicken stock, apple cider and cider vinegar. Braise for about 15 minutes until fork tender but not falling apart. Reserve 1 cup of braising liquid

Braise the Veggies & Apples

Saute garlic then add bourbon, let it die down, then add braising liquid and let simmer. Whisk in mustard, cream, then lemon juice.

Make Bourbon Cream Sauce

Remove the pork steaks from the oven and place on a plate. Remove the veggies from the liquid with a slotted spoon and place alongside the pork Pour bourbon cream sauce over the top of the pork, veggies and apples and enjoy!
