Pumpkin Cheesecake Bars are a mix of creamy cheesecake and pumpkin pie with a salty pretzel crust. This fall favorite is easy to make!
For this recipe you'll need pumpkin puree, cream cheese, pretzels, vanilla, salt, brown sugar, cinnamon, ginger, cloves, butter and heavy cream.
Begin making pumpkin cheesecake bars by pressing pretzel crust into pan then baking in a 350°F oven until golden brown.
Mix up pumpkin pie filling. This includes pumpkin puree, eggs, brown sugar, cream, cinnamon, ginger and warm spices. Pour pumpkin pie filling into pretzel crust.
Mix cheesecake filling, dollop on top of pumpkin pie filling then swirl with a butter knife to create a pretty pattern. Bake pumpkin cheesecake bars.
Serve pumpkin cheesecake bars after fully cooling. Chill overnight for best results. Cut pumpkin bars and serve.
