Pumpkin Cheesecake Cookies are one of the best fall cookie recipes. Soft cookie filled with creamy pumpkin cheesecake and pecans.
For this pumpkin dessert recipe you'll need: pumpkin puree, flour, baking soda, baking powder, salt, eggs, vanilla, pumpkin spice, brown sugar and pecans.
Mix all dry ingredients in a bowl. In a separate bowl, cream the butter and sugar, add the eggs and vanilla. Chill dough in the fridge. Indent cookies before filling.
Mix cream cheese, pumpkin spice, vanilla, eggs and salt until smooth then mix in pumpkin puree.
Add 2-3 tsp pumpkin cheesecake filling to cookie dough. Bake at 350°F 12-14 minutes.
