For this recipe you'll need: beef short ribs, beef stock, red wine, flour, butter, seasonings, carrots, shallot, celery, leek, & fresh herbs.
Heat a Dutch oven on top of the stove over high heat for several minutes until pot is very hot. Season the beef short ribs then dredge them in flour. Sear the short ribs for 3-5 minutes per side until you have a nice brown crust
Add carrots, shallots, celery and leek. Sauté for 2-3 minutes until golden brown, then add garlic, herbs, seasonings, and tomato paste.
Add the short ribs back in along with red wine and beef stock. Cover the pot and transfer it to the oven at 350 degrees F for 2-3 hours until meat is very tender and falling off the bone.
Feel free to thicken the sauce by whisking in a roux mixture. Place the short ribs over mashed potatoes and enjoy!
