with Avocado Relish & Chipotle Mayo
For this recipe you'll need: shrimp, shallots, slaw, chipotle relish, tomatillos, jalapenos, avocado, garlic, onioon, olive oil, and tortillas.
Heat a large sauté pan on medium – high heat. Add a small drizzle of olive oil to the pan. Add the shrimp and let the shrimp sear for 1-2 minutes. Flip them and sear 1 more minute.
Preheat the oven to 425°F. Roast the tomatillos, onion, and garlic for 20 minutes. Place the tomatillos, onion, garlic, jalapenos, avocado, and cilantro in the food processor and puree until everything blended but chunky.
Peel and thinly slice the shallots and toss in flour and salt. Add shallots to a hot, oil coated pan and fry until medium brown.
Smear the avocado relish on your corn tortilla. Layer with slaw, shrimp, chipotle mayo and crispy onions. Enjoy!
