This Creamy Lemon Pie recipe is simple and bursting with lemon flavor in a buttery almond cookie crust topped with whipped cream.
For this simple lemon pie recipe you'll need: fresh lemon juice, butter cookies, eggs, sweetened condensed milk, almond extract, vanilla, butter, coconut flakes and heavy cream.
Preheat the oven to 350°F. Add all crust ingredients to food processor then blend until you have a fine crumb. Press into pan then bake 10 minutes.
Whisk all lemon filling ingredients together then pour into pie crust and bake 25 minutes. Allow pie to cool.
Let this simple lemon pie chill in the fridge overnight to set or a minimum of 6 hours in the refrigerator. No need to cover the pie.
Serve this simple lemon pie topped with whipped cream and candied lemons. Add a little mint for garnish.
