This Sweet Potato Ice Cream tastes just like sweet potato pie. Roasted sweet potatoes, brown sugar, cinnamon, pecans and marshmallows. It's a Thanksgiving dessert dream!
For this Sweet Potato Pie recipe you'll need: Sweet potatoes, marshmallow fluff, pecans, eggs, sugar, salt, vanilla extract, heavy cream and brown sugar.
Heat cream and sugars in a pot just until simmering. Do not boil. Remove from the heat and prepare to add to egg mixture.
Whisk egg yolks in a bowl then temper in the warm cream mixture. Strain through a fine mesh strainer then allow to cool.
Chill the Sweet Potato Pie Ice Cream in an ice bath. Once the sweet potato mixture is chilled, it's ready to be churned.
Churn the sweet potato pie ice cream according to manufactures instructions. Add toasted marshmallow and pecans in at the end.
