Boil 4 quarts salted water in a stock pot. Add a drizzle of olive oil to the water then cook angel hair according to package instructions.
Roasting Tomatoes & Garlic
Preheat oven to 450°F then line a sheet tray with parchment paper
Place tomatoes and garlic on sheet tray, with garlic off in one corner. Drizzle with olive oil, and season with 1 teaspoon kosher salt, ½ teaspoon black pepper and 1 teaspoon dried oregano. Roast 10 minutes
Remove garlic from tray, set aside and place tomatoes back into oven for an additional 20 minutes. Remove and set aside
Chicken
Mix 1 teaspoon kosher salt, ½ teaspoon black pepper, ½ teaspoon oregano and ½ teaspoon dried basil. Evenly season both sides of chicken
Heat a large skillet over medium-high heat until pan becomes very hot. Drizzle pan with olive oil then add chicken breast. Flip after 2-3 minutes then continue cooking an additional 2-3 minutes
If chicken needs additional cooking, add it to the pan of tomatoes for 1-2 minutes in the oven. Let chicken rest on cutting board for 5-10 minutes then slice
Making Garlic Parmesan Chicken Pasta
Smash and mince roasted garlic cloves then add them to the pan used to cook chicken. Add butter, a pinch of salt then pasta. Toss pasta to coat with garlic butter
Add roasted tomatoes, sliced chicken, basil. Squeeze lemon juice into pasta then top with parmesan cheese. Serve immediately

Temp your chicken breasts with an instant meat thermometer. They should read 160°F. Once the chicken rests for 5-10 minutes, it will carryover cook to 165°FUse a thin chicken breast for this recipe for quick cooking times.Use parmesan cheese, asiago cheese, or both. I prefer buying blocks of cheese then shredding them myself with a microplane zester for quality and taste. Cook pasta "al dente" so it has texture instead of being too mushy.
