Chewy Molasses Blondies

These blondies are extra chewy, packed with holiday spices and white chocolate drizzle. The perfect festive holiday treat!

Ingredients
  

Wet Ingredients

  • 1 cup unsalted butter melted
  • 1.5 cups brown sugar
  • 2 eggs room temp
  • 1 egg yolk room temp
  • ¼ cup molasses

Dry Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon dried ginger
  • ¾ teaspoon kosher salt
  • ½ teaspoon baking powder
  • ¼ teaspoon dry mustard

Toppings

  • 1 tablespoon Demerara sugar for sprinkling on top
  • ¾ cup white chocolate chips, wafers, feves
  • 1 tablespoon olive oil for thinning out white chocolate

Instructions
 

Mix the Wet Ingredients

  • Preheat the oven to 350°F and grease an 8x8 pan, line it with parchment paper and spray the parchment paper with non stick cooking spray
  • In a medium sized mixing bowl mix all of the wet ingredients together until fully combined
    wet ingredients mixed together

Mix the Dry Ingredients

  • In another medium sized mixing bowl whisk together the dry ingredients
    dry ingredients mixed together

Mix the Batter and Bake

  • Fold the dry ingredients into the wet ingredients JUST until combined. A couple streaks of flour left is fine. Do not over mix the batter
  • Pour the batter into your parchment lined pan, top with Demerara sugar and bake for 35 min. Do not overbake

White Chocolate Drizzle

  • Once the molasses blondies are cool, melt the white chocolate and olive oil over a double boiler just until smooth. Remove from the heat and pour into a squeeze bottle or the corner of a plastic zip lock bag

  • Squeeze the white chocolate over the top of the molasses blondies then let the white chocolate set
  • Cut and serve the blondies!
