For this pumpkin creme brulee recipe you'll need: pumpkin puree, heavy cream, egg yolks, sugar, pumpkin spice, vanilla and kosher salt.
Pumpkin spice is a blend of cinnamon, nutmeg, ginger, cloves and allspice. Depending where you buy it, it can contain other spices. My favorite is from The Spice House.
Making pumpkin creme brulee is easier than you think! Blend cream, spices and salt in a pan over medium heat.
Whisk egg yolks and sugar in a medium mixing bowl until well combined. Be sure to use a heat proof bowl.
Pour hot cream into egg yolk mixture while whisking. Once fully mixed, add the pumpkin puree and whisk until smooth.
Place ramekins into a large baking pan, fill ramekins with creme brulee mixture then pour warm water into baking dish to go halfway up ramekins.
Bake pumpkin creme brulee in a 350°F oven until set but slightly jiggly in the center. Pull them out to cool, wrap with plastic and cool in the fridge overnight.
