For this Coconut Cream Pie recipe you'll need: shredded coconut, butter cookies, coconut flour, coconut milk, cream of coconut, vanilla, butter, gelatin, sugar and salt.
Start by blending pie crust ingredients, pressing them down into the pie pan then baking until golden brown.
Heat coconut milk, cream of coconut, half & half, vanilla and salt. Thicken with a slurry then remove from heat. Stir coconut milk and gelatin together then add to warm mixture. Chill 1 hour.
Toast coconut flakes in oven then set them aside to cool. You will top your coconut cream pie with them.
