Taco Meat
1drizzle olive oil
1lbground beef
1pkgtaco seasoning
Corn Salad
10ozcornfrozen then thawed or fresh
1¼cups grape tomatoescut in half. cherry tomatoes or vine ripened work too
2tablespoonlime juicefresh lime juice
1fresh jalapenosmall dice
½tsp kosher salt
½teaspooncumin
¼teaspoonchipotle chili powder
Salad Ingredients
3heartsromaine lettucecut or torn
16ozchili beansdrained and lightly rinsed
8ozwhite cheddarshredded
¼cupcotija cheese
2avocadospeeled and sliced
¼red onionthinly sliced
2tablespoonpepitas
¼cupcilantrorough chop
7ozCool Ranch Doritoswhole or crushed
1limecut into wedges
Instructions
Making the Salsa Ranch
Add the tomatillos and jalapenos to a medium sauce pot and add enough water to come to the top of them then bring it to a boil over medium heat
Boil for 5 minutes then remove from the heat
Using a slotted spoon remove the tomatillos and jalapenos from the pot an place them into the food processor
Add the onion, garlic, cilantro, salt and 3 tablespoon of the water they boiled in to the food processer and blend until it looks like a fine salsa with small chunks
Stir together with the ranch dressing and set aside
Cooking the Taco Meat
Heat a large skillet over medium-high heat and add a drizzle of olive oil
When the pan is hot add the ground beef and break up with a wooden spoon while it cooks
Once the beef is cooked then drain the excess grease, add the taco seasoning and cook for 1 more minute
Set the taco meat aside until needed
Making the Corn Salad
Mix all corn salad ingredients together in a medium bowl until well combined. Set aside until needed
Building the Salad
Add the lettuce to the bottom of a large bowl then add the taco meat, corn salad and remaining salad ingredients reserving the limes to serve on the side
Add the dressing and enjoy!
Notes
This recipe comes together fairly quickly, in under 30 minutes.Make your dressing up to 7 days ahead of time.If you're taking this Dorito Taco Salad somewhere to serve it then make all of the components to the salad but do not mix them until ready to serve. If you're taco meat has been cooked then stored in the fridge, heat it slightly in the microwave or a sauce pot before adding it to the salad. I like to make my own homemade ranch to have on hand all the time. I think the flavor is much better. I use Hidden Valley Buttermilk Ranch packet mix.
