This Peach Cobbler With Cake Mix is one of the easiest desserts. Juicy peaches caramelized with brown sugar, cinnamon, cardamom and nutmeg topped with butter and a simple cake mix. Enjoy this peach cobbler with a scoop of vanilla ice cream, whipped cream or as is.
Preheat oven to 350°F then spray a 13x9 baking dish with non-stick cooking spray
In a large mixing bowl, toss peaches, ½ cup of brown sugar, granulated sugar, cornstarch, vanilla, cinnamon, salt, nutmeg, cardamom and lemon until thoroughly mixed. Let sit 20 minutes then pour peaches into baking dish, making sure to get all the juice along with them
Topping The Cobbler
Evenly sprinkle yellow cake mix over the top of the peaches. Sprinkle remaining ¼ cup brown sugar over the top of the cake mix then add squares of butter evenly over the top
Bake 50-55 minutes until bubbling and golden brown. Let cool slightly then serve with vanilla ice cream or whipped cream
Notes
Fresh peaches work best for this recipe but you could use canned peaches in juice or frozen peaches if that's what you have. Check the cobbler around 40-45 minutes. If there are dry cake mix spots on top still then remove the cobbler from the oven, spoon some of the liquid from the cobbler over the dry spots then continue baking the rest of the time. Boxed white cake mix works also.Serve cobbler warm with a scoop of ice cream or whipped cream.
