This caramelized onion dip starts with jammy onions slow cooked until caramelized, a white wine deglaze and truffle oil finish. Make it ahead, it gets even better overnight! Grab a bag of your favorite potato chips and dig in.
½cupbeef broth1½ tsp. knorr liquid beef stock concentrate mixed with ½ cup water
1cupsour creamfull fat
¼cupmayofull fat, Hellmans or Dukes
1teaspoonkosher saltDiamond Crystal
1drizzlewhite truffle oil
2teaspoonchivesminced
Instructions
Drizzle a little olive oil in a large skillet, add diced onions to and cook over low heat for 35-45 minutes stirring occasionally until onions are soft, dark and caramelized
Once onions are caramelized, add salt, pepper, garlic and fresh thyme. Stir and allow to cook for an additional minute
Deglaze the pan with white wine, scraping up all the brown bits from the bottom. Add sherry vinegar and beef broth then allow mixture to reduce until almost all liquid has evaporated
Transfer onion mixture to a heat proof bowl then allow to chill in the freezer for 10 minutes. After chilling, mix in sour cream and mayo then transfer to a serving dish
Drizzle a very small amount of truffle oil over the top then garnish with chives and serve alongside potato chips

Scrape the bottom of the pan as the onions cook, stirring every 5-10 minutesLow and slow is the name of the game with caramelized onions. Turning the heat up will result in either a burnt onion or an onion that's cooked too quickly and hasn't caramelized.I like to chill my onions in the freezer to speed up the cooling process before adding sour cream and mayo.A little truffle oil goes a LONG way.
