Fresh green beans stewed with garlic, onions, bacon and tomatoes make the perfect warm side dish in the winter and a flavored packed side for BBQ, parties and summer dinners through the warm months.
Cook bacon pieces in a large stock pot over medium-high heat until browned, stirring occasionally. Add onions and stir. Cook another 3-4 minutes until onions start to become soft.
Stir in garlic. Let cook another 20 seconds
Add green beans, salt, pepper diced tomatoes, chicken stock and sherry vinegar. Bring to a boil then reduce heat to low and continue simmering with lid on for 90 minutes. Stir occasionally

Knorr Professional Liquid Concentrated Flavor Base is my favorite chicken stock. I generally mix 1.5 teaspoon of the concentrated base with 1 cup of water. Trim stems off green beans or buy pre-cut to save time. Add the onions once the bacon reaches your desired doneness. If you prefer crispy bacon then wait until that stage. Once you add the onion, it releases water into the pan and will make browning your bacon very difficult. Use sherry vinegar, not sherry wine. Smash garlic cloves with the back of your knife before mincing. This helps the process go faster.
