Marry Me Chicken Tortellini combines tender chicken, creamy sauce, sundried tomatoes and cheesy tortellini in a dish so irresistible. This one-pan meal is comfort food at its finest, perfect for any occasion!
2cupschicken stockI use Knorr Liquid Concentrate mixed with water
1cupheavy cream
8ozjulienned sundried tomatoesdrained well
¼teaspoonblack pepper
18ozcheese tortellini
1cupparmesan cheesefreshly grated
½cup basil leavesfresh
Instructions
Cube chicken breast then season with salt, thyme and oregano. Heat a medium stock pot over high heat until pan is very hot. Drizzle pan with olive oil then add seasoned chicken, allowing to cook undisturbed for 2 minutes. Stir chicken around and continue to cook another 2-3 minutes
Stir in minced garlic, fresh spinach and crushed red pepper. Cook 1-2 minutes
Add stock, heavy cream, sundried tomatoes and black pepper. Simmer 5 minutes
Stir in tortellini and continue to cook for 4 minutes, stirring occasionally
Stir in cheese and basil leaves and allow to cook an additional minute

Knorr liquid concentrate chicken stock is my go-to for quick chicken stock. I use 1tbsp stock concentrate per 2 cups water.Use fresh garlic cloves, I never recommend using minced garlic from a jar.Whipping cream and heavy cream are the same thing.I buy sundried tomatoes that are already julienne cut for less mess and easier cooking.Find tortellini in the refrigerated section of the store.
