Ingredients
1gallonfresh apple ciderin the refrigerated section
2cinnamon sticks
10pieceswhole cloves
½teaspoonwhole allspice
Instructions
Pour apple cider into Dutch oven
Add spices to cheesecloth, fold and tie tight
Bring cider to a simmer then turn down slightly and allow to cook for 1½-2 hours

Do not boil or simmer for the duration. This will cause too much liquid to evaporate. Once the cider simmers, you want to turn the heat down just below simmering temp so it's still very hot but not evaporating at a rapid pace. Cheesecloth can be found at your local grocer. It's a piece of food grade cloth with tiny holes that you can double or triple wrap get the flavor of herbs and spices then easily fish them out at the end. If using a crockpot, turn to high and allow to heat for 6-8 hours.
