Blend cream cheese, sharp cheddar cheese, habanero jack, pimentos, garlic, mayo, sour cream, salt and vinegar in the bowl of a stand mixer on medium speed until combined
Top pimento cheese with bacon and/or candied jalapenos if desired then serve with crackers, on a sandwich or with veggies
Notes
I much prefer to buy blocks of sharp cheddar and habanero jack then shred them myself. The quality is much better. If you don't have a stand mixer you can use an electric hand mixer.Pimento cheese can be eaten immediately after mixing however, the flavors are much more melded after 24 hours. Substitute Monterey Jack cheese in place of the habanero jack if you don't want spice.
