Stir strawberries, sugar and lemon juice together in a medium sauce pot then bring to a simmer
Continue at a low simmer for 20 minutes, stirring occasionally so it does not burn
Remove from the heat and cool. Serve chilled
Notes
Keep compote at a simmer or just below so the bottom of the pan does not scorch. Stir occasionally to keep from burning.Allow to cool for full thickening.Store in the fridge in an airtight container for up to 1 week.
