This refreshing summer salad is sweet and smoky with juicy watermelon, a spicy chipotle strawberry vinaigrette, creamy goat cheese, serrano peppers, cool cucumbers and peppery arugula. Say Hello to your new summer salad obsession!
Add all vinaigrette ingredients except oil to a food processor and blend until smooth or only a few small chunks. With the food processor on low speed, slowly drizzle oil in. Do not stop blender until all oil has been added
Watermelon Salad
Build salad by starting with a base of arugula then adding watermelon, strawberries, goat cheese, cucumbers, serrano peppers and pepitas
Sprinkle salad with salt then drizzle with strawberry dressing and serve immediately
Notes
Chipotle Strawberry Vinaigrette can be made up to 1 week ahead of time. The dressing will last up to 2 weeks in the fridge in an airtight container. Spice levels can be adjusted in this salad by using more or less chipotle pepper and/or serrano pepper. This salad is best made and served immediately. Do not preassemble salads more than 30 minutes ahead of time and do not dress more than 5 minutes ahead of time to avoid the salad becoming soggy. Add sliced or diced chicken breast to this salad and make it a complete meal for lunch or dinner!
