Juicy sweet peaches baked together with soft gooey cinnamon rolls, topped with vanilla cream cheese frosting can be served as breakfast, brunch or dessert! This easy recipe is a staple at our house!
scoop of vanilla ice cream optional in place of cream cheese frosting
Cream Cheese Frosting
4ozcream cheese
2tablespoonunsalted butter room temp
1tsp vanilla extract
1cuppowdered sugarsifted
½teaspoonkosher salt
Instructions
Cinnamon Roll Peach Cobbler
In a large bowl mix peaches, both sugars, corn starch, vanilla, cinnamon, salt, nutmeg, cardamom and juice from lemon
Pour peach mixture into cast iron skillet or baking dish
Top with cinnamon roll cubes, toasted pecans and place small dots of butter over the top
Bake at 350°F for 45 minutes or until cinnamon rolls are golden brown and peaches are bubbly
Top with ice cream of cream cheese frosting and serve warm
Cream Cheese Frosting
In a medium bowl beat cream cheese and butter with an electric hand mixer for 1 minute on medium speed
Mix in vanilla, powdered sugar and salt on low then turn mixer back up to medium and continue mixing for an additional 1-2 minutes until frosting is light and fluffy
Notes
9x9 baking dish or 9" pie dish can be used in place of 9" cast iron skillet Use ripe peaches that have a little give for best result I use cream cheese frosting when serving for breakfast and vanilla ice cream for dessert
