Cinnamon Roll Peach Cobbler takes the juiciest summer fruit and combines it with sticky sweet rolls for the ultimate brunch food! Who doesn't love cinnamon rolls? Have you ever used them as the base to another recipe?

I'm a fan of frosting for breakfast - who wouldn't love that? Homemade cream cheese frosting is the perfect topper for this peach cobbler. If you want to dress it up even more for dessert, then definitely add on some vanilla bean ice cream!
This cobbler is an easy shortcut in the kitchen. On the days I don't have time to make everything from scratch, I definitely check out helpers - you can make peach cobbler with a cake mix, too!
And then when you have more time, pull out the cake flour to make peach cobbler-inspired pound cake without a mix. It's all about balance!

Why You'll Love This Recipe
- Make a delicious crust/topping without pulling out all the canisters and measuring cups!
- Utilize summer fresh peaches - and you don't even have to peel them.
- We also use a lot of peaches here, which is perfect for when you come across a deal and then they are all ripe at once. Use any extras for Peach Burrata Salad!
- While Cinnamon Roll Peach Cobbler is most delicious fresh from the oven, it can also be made ahead and reheated so it's perfect for busy days.
Recipe Ingredients
Ingredient Notes
- Cinnamon Rolls - I like the kinds that have 8 small rolls in them. Any brand will do.
- Peaches - 6 medium, 12 small, whatever you pick up at the market. I just like to make sure my skillet is pretty full for when they cook down in the oven. Grab a few extra for peach and mango salsa!
- Lemon juice - I always use fresh-squeezed in my recipes. The point is to brighten up your sauce and allow the flavors to shine and a bottle just doesn't do that.
- Pecans - Optional, but I love the crunch that they add to the cobbler!
- Frosting - We will make our own with cream cheese and powdered sugar for a truly decadent dessert-like finish. I use homemade frosting in Lemon Zucchini Cake and Cinnamon Toast Crunch Cookies too!
Substitutions & Variations
- Not a fan of cream cheese frosting? You can make a simple glaze of milk and powdered sugar as well. I also enjoy using ice cream instead of a frosting if I am serving for dessert.
- There are so many flavors of cinnamon rolls out there. I've even seen orange, peach, or strawberry on occasion. You can use whatever can strikes your fancy for cinnamon roll peach cobbler!
- Walnuts also work well as they have a similar texture to pecans. Feel free to use up what you have! You can also leave the nuts out completely.
- Use homemade Ooey Gooey Cinnamon Rolls for a topping.
- Top this off with a brown butter cream cheese frosting!
How To Make Peach Cobbler with Cinnamon Rolls
Step 1: Add sugar, spices, lemon juice, and cornstarch to the sliced peaches and toss to coat.
Step 2: Add to a baking dish or oven-safe skillet. I love using cast iron!
Step 3: Add cut cinnamon rolls, butter, and nuts if using. Bake!
Step 4: Add frosting ingredients to a large mixing bowl.

Step 5: Whip until smooth and creamy.
Step 6: Serve cinnamon roll peach cobbler warm with prepared frosting or use ice cream!
Expert Baking Tips
- Prepare right in an oven-safe skillet! You can also use a baking dish if you prefer. I love using a cast iron skillet because it heats evenly in the oven, and still gives a great presentation straight to the table.
- Cut the cinnamon rolls into cubes with a sharp knife before adding to the skillet. This ensures every serving has some of the rolls.
- Let the peach cobbler rest for about 15 minutes after removing from the oven. It needs to cool enough to eat without burning your tongue, and it also lets the juices thicken just a touch more.
- Serve with frosting, ice cream, or with the honey goat cheese drizzle from this Peach Galette recipe!
Recipe FAQs
I recommend only adding frosting (or ice cream) to each serving! You do not want the cold component on top of any leftovers. You can store leftover cinnamon roll peach cobbler in an airtight container in the fridge for up to 5 days, the same storage method as a Pecan Pie Cobbler recipe. It can be reheated in the microwave, oven or toaster oven, and topped with frosting that was stored separately.
I always recommend using fresh fruit when possible as it really showcases the flavors of the season. However, you may use peaches canned in fruit juice if you are in a pinch. I recommend draining first as that is a lot of extra liquid for the cornstarch to thicken.
I don't - both for ease as well as the extra flavor and color it adds! They bake up so that the skin is easy to eat and enjoy. And if you aren't a fan of fuzzy peach skin, I promise you won't notice that when it's coated in delicious sugar and spice!
Frozen peaches can be used for cinnamon roll peach cobbler if fresh peaches aren't in season. Fully thaw and drain peaches before using.
