Truffle Burger
Divide ground beef into 8oz patties. Season with salt and pepper on both sides of the burgers
Heat a large skillet over medium heat until pan is very hot. Cook burger patties, undisturbed, for 2 minutes. Flip each burger and continue cooking another 1-2 minutes until burgers reach desired doneness
Add sliced Velveeta cheese to the top of each burger as soon as you flip them to allow time for cheese to melt
Toast buns in the same skillet burgers are in. Spread aioli on both sides of burger bun
Place burgers onto buns and serve
Notes
Truffle aioli can be made up to 3 days in advance and stored in the fridge in an airtight container. Ground chuck can replace wagyu if you have that on hand. Cook burgers until desired doneness. I prefer medium for my burgers. Use a digital meat thermometer to check temperature and remove burgers at 130°F for medium. Velveeta cheese packs a lot of salt so keep that in mind when you're determining the size slice of cheese. Put a lid over the top of the pan to melt cheese more quickly. Eat burgers as soon as they're ready for best quality.
