    Have you ever enjoyed a truffle burger at a restaurant? This feels like a meal you only eat out and never dream of making at home but now you can grill wagyu beef patties at your backyard barbecue!

    I'm here to show you that it's truly attainable for the home cook to make a restaurant-quality meal without breaking the bank. These are the best wagyu beef burgers!

    What Is Wagyu Beef?

    Wagyu is a Japanese Cattle, known for its high fat content, that yields an insanely marbled meat. Uniquely, this Japanese cow adds intramuscular fat as it grows.

    American Wagyu beef comes from purebred wagyu cattle that are bred with non-wagyu American cattle. This type of beef gives the best of both worlds, the familiar taste of American beef along with intense marbling in the meat.

    Snake River Farms produces high quality American Wagyu Beef, along with other meats and wagyu information. Use it in as a sub for steak in steak nachos or your favorite ground beef recipe.

    Recipe Ingredients

    Wagyu ground beef, brioche buns, chives, Velveeta cheese, truffle oil, Dijon mustard, mayo, pickles, salt and red onion.
    • Ground Wagyu beef: This Japanese beef has a high marble content, meaning you get that extra tenderness and the best burgers. It pairs beautifully with truffle and Velveeta. It's truly a culinary delight!
    • Cheese: Yes, we are using Velveeta! There's something to be said for this 'cheese' in that it melts SO well. While it may not sound gourmet, I guarantee you'll enjoy the creaminess.
    • Truffle aioli: Some white truffle oil added to mayo, plus diced pickle and onion, and this is a really tasty spread to elevate your burger to restaurant-quality. This sauce is also a great dip for fries!
    • White Truffle Oil: Find white truffle oil at your local grocer or order from Amazon! You can also use it over Truffle Pasta.
    • Buns: I love brioche as it's soft yet has a firmer crust at times to make sure it holds up to the half pound burger. It's also slightly sweet which is a great contrast to the tangy aioli.

    Substitutions & Variations

    • No wagyu to be found or just want to save it for special occasions? This truffle burger recipe will also work with ground chuck.
    • You can swap out the cheese if you really don't like the taste of Velveeta. I think cheddar, blue cheese or American cheese would taste great with the truffle aioli. These cheeses all go well with Texas Toast Sloppy Joes too!
    • Feel free to use any buns you like with burgers, such as a pretzel roll or potato bun.
    • Add items such as a perfectly runny egg or bacon to these homemade burgers.

    How To Make A Wagyu Beef Burger

    Step 1: Combine all aioli ingredients and set aside for the flavors to meld.

    Step 2: Form the beef into two wagyu burger patties and season with salt and black pepper.

    Step 3: Heat skillet over medium-high heat. Sear the burgers on both sides, until they are almost to your desired doneness.

    Step 4: Add a slice of cheese to each patty and cover with a lid to melt quickly.

    Step 5: Spread aioli on burger buns.

    Step 6: Add the burger and any other toppings and enjoy! Maybe add a side of sweet potato fries!

    Expert Cooking Tips

    • Use a lid to help the cheese melt quickly, so your wagyu truffle burgers don't go past your desired doneness.
    • Truffle oil packs a punch! It's a pungent oil, so don't get carried away adding too much.
    • Use a thermometer to check the internal temperature, 130°F for medium.
    • Make the aioli first so the flavors have a chance to combine. I do this with many sauces, salsa chimichurri being one of them!

    How Do I Store This Wagyu Beef Burger Recipe?

    I don't suggest reheating truffle burgers with all the toppings. It's best to only make what you will eat right away however, if you do have leftovers, you can store them in an airtight container or wrapped in plastic wrap. Preferably disassembled so things don't get soggy.

    What Is An Aioli?

    At its most basic, an aioli is a cold, creamy sauce made from an emulsion of egg yolks and oil - similar to mayo! We are using premade mayo and dressing it up with truffle oil and Dijon mustard. You can make this up to 3 days ahead. Try Alexia Sweet Potato Fries with an herb aioli!

    What Toppings Are Best For A Wagyu Beef Burger?

    Many toppings work for wagyu burgers. The aioli has pickles and onions already, which is a great way to get the flavors without large pieces sliding off your burger with each bite. Feel free to add crisp bacon or floppy bacon, a runny egg, or fresh garden tomato slices to the truffle burger as well. Classic burger toppings will also do the trick!

    What Is The Difference Between White Truffle Oil & Black Truffle Oil?

    The main difference between white truffle oil and black truffle oil is the flavor and aroma of the black truffle oil will be stronger, more earthy and more complex. White truffle oil is a bit lighter and has onion and garlic undertones along with some earthy flavor as well.     Equipment

    • 1 set of mixing bowls
    • 1 larger skillet or grill

    Ingredients
      

    Truffle Aioli

    • ½ cup mayo Hellman's or Dukes
    • 1 tablespoon chives fine chop
    • 1½ teaspoon white truffle oil
    • 1 tsp dijon mustard
    • ⅓ cup claussen's pickles diced
    • ¼ cup red onion fine dice
    • ¼ teaspoon kosher salt

    Burger

    • 1 lb wagyu ground beef
    • 2 slices Velveeta cheese ¼ inch thick
    • tt kosher salt
    • tt black pepper
    • 2 brioche buns

    Instructions
     

    Truffle Aioli

    • Whisk all truffle aioli ingredients in a small bowl. Set aside until needed

    Truffle Burger

    • Divide ground beef into 8oz patties. Season with salt and pepper on both sides of the burgers
    • Heat a large skillet over medium heat until pan is very hot. Cook burger patties, undisturbed, for 2 minutes. Flip each burger and continue cooking another 1-2 minutes until burgers reach desired doneness
    • Add sliced Velveeta cheese to the top of each burger as soon as you flip them to allow time for cheese to melt
    • Toast buns in the same skillet burgers are in. Spread aioli on both sides of burger bun
    • Place burgers onto buns and serve

    Notes

    Truffle aioli can be made up to 3 days in advance and stored in the fridge in an airtight container. 
    Ground chuck can replace wagyu if you have that on hand. 
    Cook burgers until desired doneness. I prefer medium for my burgers. Use a digital meat thermometer to check temperature and remove burgers at 130°F for medium. 
    Velveeta cheese packs a lot of salt so keep that in mind when you're determining the size slice of cheese. 
    Put a lid over the top of the pan to melt cheese more quickly. 
    Eat burgers as soon as they're ready for best quality.
