This Creamy Taco Truck Green Salsa will last up to 2 weeks in the fridge. After blending the fresh ingredients in the food processor you'll need to transfer the green salsa to an airtight container.
As the taco truck salsa chills, it will thicken a bit. If you like a thinner sauce then you can add either a tablespoon of water or olive oil at a time. Mix in between each addition until you reach desired consistency.

- Onion - I use yellow or white onion

- Lime Juice - Fresh squeezed lime juice is really the best option for flavor here. I don't recommend using juice from concentrate
- Olive Oil - Oil helps blend the salsa together. You could also use avocado oil or vegetable oil
- Sour Cream (optional) - Sour cream is totally optional here but you could add ¼ - ½ a couple to make it creamier or even to cool it down if it's a bit too spicy for you

- If you want to up the heat level a little bit you can add 1-2 serrano peppers to the mix
- If you want to make the sauce to have an extra creamy texture or cool it down a bit then add ¼ - ½ cup sour cream

How to make this Creamy Taco Truck Salsa Recipe
This creamy yellow-green sauce is very easy to make. First, preheat the oven to 450°F then cut the stems off the jalapenos. Peel and cut the onion into large chunks. Place the onion and jalapeno on your sheet pan then drizzle with olive oil and a pinch of salt.
Roast the jalapeno and onions for 15 minutes or until you see a nice brown color starting to happen. Remove the pan from the oven then add all ingredients to the food processor or high - speed blender. If using sour cream, do not mix that in until the very end.
Blend the ingredients on high for about 60 seconds until almost completely smooth. If for any reason you're having trouble getting the food processor to start blending, you can add a tablespoon or two more oil.
Taste the spicy green sauce and check the salt level. Add more if needed. If you're using sour cream then add it to the processor and pulse until combined. This shouldn't take long.
Do no mix for too long after adding sour cream or it will become too loose. You can add the Creamy Taco Truck Green Salsa to a small bowl to serve or a squeeze bottle for easy topping.

- 10 jalapenos stems cut off
- 1 medium onion peeled and rough chopped
- 7 cloves garlic peeled
- 1½ teaspoon kosher salt divided
- 1½ tablespoon lime juice
- ½ cup olive oil
Instructions
Roasting the Veggies
- Preheat the oven to 450°F then place the stemmed jalapenos and chopped onion on a baking sheet
- Drizzle them with olive oil and a pinch of kosher salt
- Roast for 15 minutes or until they start to brown
Blending the Sauce
- Add roasted jalapenos, onions and remaining ingredients to food processor and blend on high for 60 seconds
- Taste and check salt level. Adjust if needed
