    This Creamy Taco Truck Green Salsa Recipe is for you if you love spice and garlic!! This delicious recipe is made of roasted jalapenos, onion, garlic, lime juice, salt and olive oil. You can even add in a little sour cream to make it extra creamy but it's delicious either way!

    If you have a favorite taco truck then you likely know a creamy green sauce that is similar to this. I have always loved green salsa but this is a little different than the typical green tomatillo salsa that I make.

    Without the tomatillos, all of the acidity is cut out. That's why I add lime juice here when in tomatillo salsa I do not. The lack of tomatillos and cilantro and addition of lime juice is the big difference between a salsa verde recipe and this sauce for me.

    This Creamy Taco Truck Green Salsa Recipe makes your tacos go from "okay" to the best tacos! Homemade salsa is the best! A fair warning though, this recipe does contain a fair amount of jalapenos and garlic.

    How long does Creamy Taco Truck Green Salsa last?

    This Creamy Taco Truck Green Salsa will last up to 2 weeks in the fridge. After blending the fresh ingredients in the food processor you'll need to transfer the green salsa to an airtight container.

    As the taco truck salsa chills, it will thicken a bit. If you like a thinner sauce then you can add either a tablespoon of water or olive oil at a time. Mix in between each addition until you reach desired consistency.

    If you add water or oil, taste the Creamy Taco Truck Green Salsa checking for salt level. Often times you'll need to add a pinch more salt after thinning it out.

    Ingredients needed

    • Jalapeno Peppers - Fresh roasted jalapenos are used for this spicy green sauce
    • Onion - I use yellow or white onion
    • Garlic - Fresh garlic cloves are the best option for the Creamy Taco Truck Green Salsa Recipe
    • Kosher Salt - Salt brings out the flavors and makes everything pop
    • Lime Juice - Fresh squeezed lime juice is really the best option for flavor here. I don't recommend using juice from concentrate
    • Olive Oil - Oil helps blend the salsa together. You could also use avocado oil or vegetable oil
    • Sour Cream (optional) - Sour cream is totally optional here but you could add ¼ - ½ a couple to make it creamier or even to cool it down if it's a bit too spicy for you

    Equipment you'll need

    • Oven - The jalapenos and onion need to be roasted
    • Baking Sheet - You can use one baking sheet to roast the jalapenos and onions at the same time
    • Food processor - Blend all the ingredients in a food processor or high-speed blender

    Tips for the best Creamy Taco Truck Salsa

    • If you want to up the heat level a little bit you can add 1-2 serrano peppers to the mix
    • If you want to make the sauce to have an extra creamy texture or cool it down a bit then add ¼ - ½ cup sour cream
    • This taco truck salsa is really delicious on my Shrimp Tacos with Avocado Relish and Chipotle Mayo
    • Make Creamy Taco Truck Salsa ahead of time, it keeps for up to 2 weeks in the fridge
    • If you don't love garlic then add a few less cloves

    How to make this Creamy Taco Truck Salsa Recipe

    This creamy yellow-green sauce is very easy to make. First, preheat the oven to 450°F then cut the stems off the jalapenos. Peel and cut the onion into large chunks. Place the onion and jalapeno on your sheet pan then drizzle with olive oil and a pinch of salt.

    Roast the jalapeno and onions for 15 minutes or until you see a nice brown color starting to happen. Remove the pan from the oven then add all ingredients to the food processor or high - speed blender. If using sour cream, do not mix that in until the very end.

    Blend the ingredients on high for about 60 seconds until almost completely smooth. If for any reason you're having trouble getting the food processor to start blending, you can add a tablespoon or two more oil.

    Taste the spicy green sauce and check the salt level. Add more if needed. If you're using sour cream then add it to the processor and pulse until combined. This shouldn't take long.

    Do no mix for too long after adding sour cream or it will become too loose. You can add the Creamy Taco Truck Green Salsa to a small bowl to serve or a squeeze bottle for easy topping.

    Equipment

    • 1 food processor
    • 1 oven
    • 1 baking sheet

    Ingredients
      

    Creamy Taco Truck Green Salsa

    • 10 jalapenos stems cut off
    • 1 medium onion peeled and rough chopped
    • 7 cloves garlic peeled
    • 1½ teaspoon kosher salt divided
    • 1½ tablespoon lime juice
    • ½ cup olive oil

    Instructions
     

    Roasting the Veggies

    • Preheat the oven to 450°F then place the stemmed jalapenos and chopped onion on a baking sheet
    • Drizzle them with olive oil and a pinch of kosher salt

    Blending the Sauce

    • Add roasted jalapenos, onions and remaining ingredients to food processor and blend on high for 60 seconds

    • Taste and check salt level. Adjust if needed

    Notes

    Adding ¼ - ½ cup sour cream is optional to make the sauce creamier or cool down the spice if it's too spicy for you.
    You can also add water or oil, a tablespoon at a time if sauce is too thick after chilling.
