    Easy S'mores Cookie Bars

    S'mores Cookie Bars are always a hit and they're so easy to make! Cookie butter flavored cookie, graham cracker, Hershey's chocolate bars, chocolate chips and gooey marshmallow fluff.

    A summer time dream. These bars are full of chocolatey gooey deliciousness that the whole family will love!

    If you've never tried cookie butter before, you're going to love it! It's a rich creamy spread made from Biscoff cookies.

    To me it has a graham cracker taste to it, which makes it the perfect addition to this recipe!

    Memorial Day is right around the corner and these Easy S'mores Cookie Bars would make the best treats! This recipe is simple to make and it's a classic flavor.

    Eating s'mores always reminds me of being a kid, sitting around a bon fire, camping and being with family. These cookie bars bring back those same memories!

    Just without all the hassle! Sure, regular s'mores are easy to make. But they can me messy, you need a fire and everyone has to wait their turn.

    These S'mores Cookie Bars are easy too, transport well and are ready to go for everyone all at once! You also don't have to worry about building a fire.

    S'mores are a special occasion treat for us, while these cookie bars can be made on repeat all year long!

    They're totally in season in the summer and fall but you can enjoy them year round anytime you're craving s'mores!

    They're absolutely perfect for picnics, BBQ's and parties!

    Recipe Ingredients

    • Butter - I use unsalted butter so I can control the salt level myself
    • Brown Sugar - Brown sugar gives the cookie portion a nice chewy texture
    • Granulated Sugar - To sweeten the cookie a bit more
    • Cookie Butter - Cookie butter is creamy and delicious. It enhances the graham cracker taste
    • Eggs - I use room temperature large eggs
    • Vanilla Extract - Pure vanilla extract gives the best flavor
    • All Purpose Flour - I have not tested this recipe with any other type of flour
    • Baking Powder - This leavener gives the cookie dough a bit of a rise
    • Kosher Salt - Salt will help bring out the flavor of all the ingredients
    • Graham Crackers - Crumbled graham crackers are added for the true s'mores effect
    • Semi Sweet Chocolate Chips - Use whichever brand you like best
    • Hershey's Chocolate Bars - You can't have s'mores without candy bars
    • Marshmallow Fluff - I use store bought for ease but you can also use homemade marshmallow fluff
    • Flaky Sea Salt - I like to sprinkle flaky sea salt on top of the S'mores Cookie Bars when they are done. It's an easy way to get that sweet and salt combo that's so tasty

    Equipment needed

    • Mixing Bowls - I use one large bowl and one medium bowl. The large mixing bowl is for the wet ingredients and ultimately the all of the cookie bar ingredients. I use the medium bowl to whisk my dry ingredients before incorporating them into the wet ingredients.
    • 8x8 Pan - I use an 8x8 inch baking pan to make these Easy S'mores Cookie Bars. I like the thickness it gives me.
    • Parchment Paper - Parchment paper sheets are your best friend when it comes to baking bars and brownies. Lining your pan with it makes for really easy removal and allows you to cut the s'mores cookie bars outside of the pan after they've cooled.
    • Electric Hand Mixer or Stand Mixer (optional) - For this easy recipe you can use an electric hand mixer, stand mixer or mix by hand! Whatever is most convenient for you!
    • Cooling Rack - It's best to let these Easy S'mores Cookie Bars cool on a wire rack after baking.

    Tips for Easy S'mores Cookie Bars

    • Do not over bake! The marshmallow fluff with become black and the cookie bar will dry out.
    • Do not over mix. Be gentle when mixing the dry ingredients into the wet. Your Easy S'mores Cookie Bars can become dense and dry with over mixing.
    • LET THEM COOL COMPLETELY before cutting. If you don't allow the cookie bars to cool completely then they will fall apart into one big mess.
    • If you prefer dark chocolate chips over semi sweet chocolate chips then use them! They're delicious both ways.
    • Make these Easy S'mores Cookie Bars a day ahead of time when taking them to a party. It saves time and they're just as delicious the next day.
    • Be sure to spread the marshmallow fluff layer across all of the cookie dough layer.
    • When adding the last ¼ of the cookie dough on top, it doesn't need to fully cover. Leave some spots where the marshmallow cream is peaking through.
    • I like to get the marshmallow slightly brown in some spots ( I like burnt marshmallows) and it gives a bit of a crunch to add even more texture!
    • Cut these bars whatever size you like. I typically cut them into 12 pieces. They are very rich.

    How to make Easy S'mores Cookie Bars

    Making these S'mores Cookie Bars is so easy! First, preheat your oven to 350°F then line an 8x8 pan with parchment paper.

    Mix all the wet ingredients together in a large bowl until well combined. You can use an electric hand mixer, stand mixer or do it by hand!

    In a separate medium bowl, whisk the dry ingredients together. Add the dry ingredients to the wet and mix just until almost fully combined.

    Fold in the chocolate chips. Press ¾ of that cookie bar batter into the bottom of your baking dish, reserving the other ¼.

    Spread the marshmallow fluff evenly over the layer of cookie dough. Sprinkle the crumbled graham cracker over the top of the marshmallow layer.

    Alternatively, you can place graham cracker halves over the top of the marshmallow if you like.

    Top that with the remaining cooking dough. Spread the dough over the top but it does not need to cover completely.

    Do not add the Hershey's bars until the Easy S'mores bars are almost finished cooking. The chocolate will start to burn

    Bake for 35-40 minutes at 350°F. I add the Hershey's milk chocolate bar pieces on for the last 3-5 minutes of baking.

    Just enough to melt the chocolate. The marshmallow fluff will be slightly puffed. The cookie portion will be golden brown.

    Do not over bake. These Easy S'mores Cookie Bars will continue cooking after they're taken out of the oven.

    Place them on a wire rack to cool completely before removing and cutting the bars. Do not attempt to take them out or cut them while hot.

    Once cooled, cut into whatever size squares you like. I typically do 12 because these cookie bars are so rich and sweet.

    How to store Easy S'mores Cookie Bars

    S'mores Cookie Bars can be stored in an airtight container for up to 5 days. They can be left out on the counter or stored in your refrigerator.

    If stored in the fridge then just allow them to come to room temperature on the counter before serving. This will allow the chocolate and marshmallow to warm up a little and become soft and gooey again.

    How long should I bake S'mores Cookie Bars?

    These Easy S'mores Cookie Bars have a cook time of 35-40 minutes. Make sure to let them cool fully before removing them or cutting them.

    They will appear underdone if you try doing so before they are cool. The bars will set once cool.

    What's the best way to cut them?

    The best way to cut Easy S'mores Cookie Bars is to remove them from the pan first. That is why I line my pan with parchment paper first.

    That way I can remove the cookie bars then easily cut them on top of a cutting board. When using an 8x8 pan I typically go one of two routes when cutting bars.

    I either cut them into 9 or 12 pieces. These particular bars are loaded with s'mores flavor, therefore very sweet and rich.

    I cut them into 12 pieces to end up with smaller portions. It's easy to just grab another piece if that wasn't enough!

    How do I line a pan with parchment paper?

    Lining your pans with parchment paper is SO convenient and easy. Spray your pan with non-stick cooking spray.

    Cut a sheet of parchment paper slightly larger than your pan. About 2.5 inches on each side.

    Center it over your pan then press it down inside. Cut each corner of the parchment paper with scissors all the way down to the pan.

    Fold one side in front of the other, nestling it into the corner. Repeat with the other 3 corners.

    Spray the parchment paper again before adding the cookie dough.

    Can I use different chocolate chips?

    Yes, you can use whatever you like! I'm a fan of semi sweet chips or dark chocolate chips usually. They are interchangeable here.

    You could also use milk chocolate but since the S'mores Cookie Bars already have Hershey's milk chocolate bars on top that seems a little overkill to me.

    Can I make these Easy S'mores Cookie Bars dairy free?

    Yes, you can. You can use dairy free chocolate and a plant based butter. They will still be delicious!

    Where can I buy Cookie Butter?

    You can buy Cookie Butter at your local grocery store. I see it all the time and Walmart and Jewel in my area.

    If you're unable to find it at the local grocery store then you can always order it off of Amazon RIGHT HERE.

    Easy S'mores Cookie Bars

    Equipment

    • 1 cooling rack
    • 1 electric hand mixer or stand mixer optional

    Ingredients
      

    Wet Ingredients

    • 1 cup unsalted butter melted
    • 1½ cups brown sugar
    • ½ cup granulated sugar
    • ½ cup cookie butter
    • 2 eggs room temp
    • 1 tablespoon vanilla extract

    Dry Ingredients

    • 2 cups all purpose flour
    • 1 tsp baking powder
    • ¾ tsp kosher salt

    Mix-Ins

    • 6 oz semi sweet chocolate chips

    Additional Layers

    • 7½ oz marshmallow fluff
    • 1 oz graham crackers crumbled

    Toppings

    • 5 oz hershey's chocolate bar broken into pieces
    • ½ tsp flaky sea salt

    Instructions
     

    Mixing the Wet Ingredients

    • Preheat the oven to 350°F then line an 8x8 pan with parchment paper. Spray the pan and the top of the parchment with non-stick cooking spray
    • Mix the wet ingredients in a large bowl until well combined. You can use an electric hand mixer, stand mixer fitted with the paddle attachment or mix by hand

    Mixing the Dry Ingredients

    • Whisk the dry ingredients together in a medium bowl

    Making the S'mores Cookie Bars

    • Mix the dry ingredients into the wet ingredients just until almost fully combined
    • Fold in the chocolate chips
    • Press ¾ of the cookie dough into the bottom of the prepared pan. Reserve the other ¼ for later
    • Spread the marshmallow fluff evenly over the top of the cookie dough. Top with crumbled graham cracker
    • Add the remaining ¼ of the cookie dough to the top and spread out. It doesn't need to be completely covering the top. It's good to have some open spaces for the marshmallow to peak through
    • Bake 35-40 minutes. During the last 5 minutes of baking add the Hershey's chocolate bar pieces just so they melt on top
    • Remove them from the oven and sprinkle with flaky sea salt. Let them COOL COMPLETELY on a wire rack before cutting. Once cooled, remove them from the pan by pulling up on the parchment paper
    • Cut into 9 or 12 squares and serve room temperature
