It’s so much fun making your own Homemade Bubble Waffle for breakfast, a snack or dessert! If you’ve seen them before then you know the bubble and web like design I’m talking about.

These tasty waffles have soft cake-like bubbles and crispy edges. They are sweet and golden brown.

This Bubble Waffle recipe is topped with lemon honey spread, fresh strawberry topping and pistachios! You can top your own bubble waffles however you’d like!

Powdered sugar and maple syrup are popular toppings here at my house.

Perfect for breakfast, brunch, snacks and dessert!

A Bubble Waffle maker is required to make this recipe. This is what I use.

This easy recipe is SO GREAT to make with kids! Let them help make, decorate or fill them.

Bubble Waffles can be rolled into cones then served with ice cream inside, which makes them super fun for birthday parties!

Fun toppings to add when filling with ice cream:

  • Syrups (Chocolate, Strawberry, Caramel)
  • Whipped Cream
  • Candy

The kids will love a “do it yourself” ice cream bar. You’ll be the hero of the next birthday party!

What is a Bubble Waffle?

A Bubble Waffle, also known as Hong Kong Egg Waffles, is a popular street food that originated in Hong Kong in the 1950’s. It’s known for its unique “bubble wrap” and “web-like” appearance.

These Hong Kong cakes have a mixture of textures similar to a cookie and a sponge cake. The waffle is golden brown with crispy edges and soft “egg puffs” or bubbles.

You can roll them up into a cone shape then fill them with ice cream and toppings, a more modern approach. Or you can lay them flat on a plate like Belgian Waffles then top them as you like.

These hot waffles are sweet and delicious and there’s really no wrong way to eat them!

Be sure to get yourself a bubble waffle pan if you want to make them. The rest is easy!

Ingredients needed

  • All Purpose Flour – Flour will create structure for the bubble waffle. I have not tested this recipe with any other type of flour and am unsure of the results when using different flour.
  • Granulated Sugar – Sugar makes these waffles sweet and helps make crispy edges.
  • Cornstarch – Cornstarch helps with the structure.
  • Baking Powder – Baking powder is a leavening agent that will give these bubble waffles a rise.
  • Kosher Salt – Salt helps bring out the flavor of all the other ingredients.
  • Eggs – These waffles have more of an eggy texture that is so good!
  • Milk – I use whole milk.
  • Water- To add more liquid the the batter.
  • Unsalted Butter – Melted butter is added to the raw batter. I use unsalted because I like to control the salt level myself.
  • Vanilla Extract – Vanilla gives a great base flavor to the waffles.
  • Non-Stick Cooking Spray – Use your favorite non stick cooking spray on the Bubble Waffle pan for easy removal.
  • Fresh Lemon – The juice of the lemon goes in with the strawberries and the zest goes into the cream cheese spread.
  • Strawberries – Fresh strawberries are best when in season, otherwise you can use frozen.
  • Honey – Raw honey is my favorite.
  • Pistachios – Pistachios are sprinkled on top over the strawberries and honey spread.
  • Cream Cheese – I use full fat cream cheese.
  • Cool Whip – I used sugar free cool whip for this recipe but you could use the regular as well.

Equipment needed

  • Electric Bubble Egg Waffle Maker- You must have one of these to achieve the bubble look. I use the CucinaPro Bubble Waffle Maker.
  • Large Mixing Bowl – You’ll need a large bowl to mix the waffle batter.
  • Medium Mixing Bowl – I use a medium bowl to blend the cream cheese spread and make the strawberries.
  • Electric Hand Mixer – Use an electric mixer to whip the cream cheese spread.

Tips for the best Bubble Waffle

  • You will need to have a Bubble Waffle Maker. You cannot use a regular waffle iron.
  • Each machine is different but I use about 3/4 cup of batter per waffle. Make sure to spread the batter around with a spoon to fill each bubble and have no gaps.
  • It’s likely that some waffle batter may spill over the sides of the pan. Use a paper towel to wipe it away.
  • Cooking times can vary for each special waffle iron. I cook mine for 1-2 minutes per side but it’s best to check the manufacturer’s instructions. Be sure to check for doneness and a golden brown color on your first waffle to get an idea of timing.
  • For best results spray the Bubble Waffle maker with a little bit of non-stick cooking spray on the top and bottom or wipe with a little oil. You can use vegetable oil, olive oil or peanut oil.
  • Try making waffle cones by rolling the Bubble Waffle up. You can use a paper cone to help the waffle hold its shape then fill it with ice cream and toppings!
  • Add 1-2 TBSP cocoa powder to make chocolate waffles!
  • Set your oven on 160°F and keep your waffles warm as you make the rest of them.

How to make a Homemade Bubble Waffle

Making Homemade Bubble Waffles is fun and easy! Start by making the toppings first then the batter.

Making the toppings

Slice the strawberries into a medium bowl then add sugar and lemon juice. Stir to coat then set aside.

Next make the honey lemon spread. In a medium bowl combine cream cheese, cool whip, honey and lemon zest.

Using an electric mixer, mix on low-medium speed until well combined and fluffy. This should take 1-2 minutes.

Set the topping aside until needed.

Making the Bubble Waffle

Turn on your Bubble Waffle machine.

In a large bowl mix flour, cornstarch, baking powder and salt until combined. In a medium bowl whisk the wet ingredients.

Pour the wet ingredients into the dry ingredients then whisk until fully combined. There may be a few lumps still, that’s okay.

Spray the electric bubble waffle maker with non stick cooking spray on both sides. Pour 3/4 cup of waffle batter into the machine then spread it evenly with a spoon to fill all bubbles and gaps.

Close the machine and cook the waffle for 1-2 minutes, flip over and cook an additional 1-2 minutes. Remove the bubble waffle from the machine and keep warm in a 160°F oven or serve immediately.

Repeat this process with the remaining batter.

FAQ

How to store Bubble Waffles

Bubble Waffles are best eaten hot and fresh. If you’re not able to finish your waffle then you can store it in the fridge for up to 2 days.

Either wrap it tightly in plastic wrap, a Ziplock bag or store it in an airtight container.

Can I freeze them?

Yes, you can! Wrap the Bubble Waffles tightly in 2-3 layers of plastic wrap then place them in a resealable plastic freezer bag and store for up to 1 month.

It’s best to stack them on an even surface to help them hold their shape.

Reheating

Once you store the Bubble Waffle in the fridge or freezer it will lose its crispness and become soft. To add some crispness back, the best way to reheat them is in the oven.

Turn your oven to 350°F, place the waffles on a sheet tray then heat them for about 5 minutes or until warm. It won’t be as crisp as it was when it was first made but it will do the trick!

Of course if you’re not worried about crispness then you can just microwave each waffle for 20-30 seconds.

What is a Bubble Waffle made of?

A bubble waffle is made up of ingredients similar to a Belgian Waffle. Those ingredients include: flour, baking powder, salt, cornstarch, sugar, eggs, milk, water, vanilla and butter.

Bubble Waffle batter has more sugar and more eggs than a traditional waffle. Making it a sweeter and eggier batter.

How do you eat Bubble Waffles?

They can be eaten a few different ways, with endless toppings. Some people eat them flat on a plate with butter and maple syrup as you would a traditional waffle.

You can also eat them on a plate with toppings such as fresh fruit, whipped cream, sweetened cream cheese spreads, nuts, etc.

A third way Bubble Waffles are eaten is as a Bubble Waffle cone.

What is a Bubble Waffle Cone?

A Bubble Waffle Cone is when you take the waffle and roll it up in the shape of an ice cream waffle cone. Place the waffle in a paper cone to hold its shape.

It’s then filled with ice cream and toppings just like a traditional waffle cone!

How do you clean a Bubble Waffle Machine?

First things first, unplug the machine! Anytime you’re cleaning your waffle maker you want to make sure it’s been unplugged.

Secondly, DO NOT submerge it in water. You will ruin the machine and could possible electrocute yourself if the machine is still plugged in.

Use a dry rag or soft sponge to wipe away any batter from the inside or the outside of the machine.

If you’re not able to remove all the debris then wet your rag or sponge, ring it out then wipe the machine that way.

Ingredients
  

Strawberry Topping

  • 1 pint strawberries hulled and sliced
  • ¼ cup granulated sugar
  • ½ lemon juiced

Honey Lemon Cream

  • 8 oz cream cheese room temp
  • 8 oz sugar free cool whip room temp
  • 2 tbsp honey
  • 1 lemon zested

Dry Ingredients

  • 1½ cups all purpose flour
  • 1 tbsp cornstarch
  • 2 tsp baking powder
  • ½ tsp kosher salt

Wet Ingredients

  • ¾ cup granulated sugar
  • 3 eggs room temp
  • ½ cup whole milk room temp
  • ½ cup water room temp
  • 2 tbsp unsalted butter melted
  • 1 tbsp vanilla extract

Additional Toppings

  • ½ cup pistachios rough chop

Instructions
 

Making the Strawberry Topping

  • Place sliced strawberries in a medium bowl along with the sugar and lemon juice. Stir to coat then set aside until needed

Making the Honey Lemon Topping

  • Using an electric hand mixer on low-medium speed, blend the cream cheese, cool whip, honey and lemon zest in a mixing bowl until combined and fluffy. 1-2 minutes

Making the Batter

  • Turn the Bubble Waffle Maker on
  • Whisk all dry ingredients together in a large bowl
  • Whisk the wet ingredients together in a medium bowl until fully combined
  • Pour the wet ingredients into the dry ingredients and whisk until large lumps are gone. You will still see small lumps, that is okay. Do not over mix
  • Spray both sides of the waffle machine with non-stick cooking spray then pour ¾ cup of waffle batter into the bottom of the pan
  • Use a spoon to ensure batter is in every bubble leaving no gaps. Close the lid and cook 2 minutes. Flip the waffle maker over and cook an additional 2 minutes on the other side
  • Remove the waffle from the machine and place it on a plate to be served or in an oven heated to 160°F to hold until the rest are made
  • Repeat this process with the remaining batter

Topping the Bubble Waffle

  • Serve each waffle on a plate. Top each one with honey lemon spread, strawberries and crushed pistachios. Serve immediately while warm
