This Strawberry Cream Cheese Pie is the epitome of a summer pie in my eyes. It’s got fresh strawberries, a slightly sweetened cream cheese, flaky pie crust, cool whip and it’s cold!

This pie is perfect to sit back, relax and enjoy on hot summer days! Who likes an easy recipe?!

Okay, me too! This strawberry jello cool whip pie is a great recipe for you then.

Strawberry Cream Cheese Pie has simple ingredients, easily found at the grocery store. It’s the perfect dessert for any occasion.

I don’t think there’s anyone who dislikes this pie, it’s always a huge hit! No bake desserts always go over well.

This no bake pie can be made with store bought crust or homemade. Sometimes I do store bought and sometimes homemade, depends how last second it is.

Also how lazy I’m feeling, haha. But either way works just fine.

My mother-in-law first introduced me to this pie so all credit goes to her. This pie is a staple at birthdays and for good reason.

Lucky for all of you she let me in on the recipe!

Ingredients for Strawberry Cream Cheese Pie

  • Pie Crust – Store bought or homemade. You will need to blind bake the crust
  • Strawberries – Fresh fruit adds so much fresh flavor to this Strawberry Cream Cheese Pie
  • Granulated Sugar – Sugar is added to the cold water and strawberry jello mix
  • Strawberry Jell-O – This gives the fresh strawberry pie filling a little added flavor
  • Cream Cheese – The layer of sweetened cream cheese gives this easy pie recipe a creamy deliciousness
  • Cool Whip – You can top this no bake strawberry pie with cool whip or make your own sweetened whipped cream using heavy cream
  • Cornstarch – This helps thicken the gelatin mixture even more
  • Demerara Sugar – Sprinkle this sugar around the top of the pie shell before baking it. You can use granulated sugar as well

Tips for the best Strawberry Cream Cheese Pie

  • Use store bought or homemade pie crust
  • Let the crust cool to room temperature before filling the pie
  • Make sure you bring the sugar, water and cornstarch mix to a boil and let it boil for a minute while stirring. It won’t reach its full thickening potential if not
  • Make sure the mixture comes to a boil again for another minute after the Jell-O is added
  • Let the sauce cool before adding the sliced strawberries
  • Leave the cool whip off until just before serving
  • This pie can be made up to 24 hours ahead of time
  • Serve Strawberry Cream Cheese Pie chilled
  • If you want to switch things up you can use other fruits like: peaches, blueberries, mangos, raspberries or blackberries

Can I use frozen strawberries?

For this Strawberry Cream Cheese Pie I do not recommend using frozen strawberries. The quality and texture will be off.

Frozen strawberries are often interchangeable but for this particular recipe, fresh strawberries are best.

Can I make this pie ahead of time?

Yes, absolutely! That is my favorite thing about this pie. Besides the delicious flavor, obviously.

If it’s your first time making this easy strawberry pie recipe then I would actually suggest making it a day ahead of time.

That’s the best way to get a feel for making it and how long it will take to cool the crust, sauce and then chill the pie.

I typically make it a day ahead of time or in the morning when I need it for the evening.

Can I freeze Strawberry Cream Cheese Pie?

No, unfortunately this Strawberry Cream Cheese Pie does not hold up well in the freezer. It will compromise the quality.

How to store Strawberry Cream Cheese Pie?

Strawberry Cream Cheese Pie will keep in the fridge for up to 5 days. After that things begin to get a little soggy.

Wrap it tightly with 2 layers of plastic wrap. You can store it with or without the cool whip on top.

If I know that I’m not serving it right away then I leave the cool whip off until I’m ready to serve.

You can also store it in an airtight container.

How to serve

Strawberry Cream Cheese Pie is best served cold. It is best straight out of the fridge after chilling.

It can sit out for about an hour or so but not longer than that. The pie will start to get a bit runny and soggy when it warms up.

How to make Strawberry Cream Cheese Pie

First step is your pie crust. Fit the crust into the 9-inch pie pan and crimp edges.

Brush the edges of the crust with egg wash then sprinkle with Demerara sugar. Follow package directions to blind bake then let crust cool.

Next pour the granulated sugar, cornstarch and water into a sauce pan. Whisk until there are no lumps.

Bring the sugar mixture to a boil over medium heat. Meanwhile, slice the fresh berries then set aside. Continue whisking the sugar mixture until it boils.

Let the mixture boil for 1 minute while whisking. Add in the strawberry gelatin and continue whisking for 1 more minute while the mixture boils.

Remove it from the heat and allow it to cool. Add the sliced strawberries to the jello mixture and stir.

While the strawberry mixture is cooling, beat the room temp cream cheese and granulated sugar with an electric hand mixer until well blended. Spread the cream cheese mixture into the bottom of the completely cooled pie crust.

Pour the strawberry mixture on top and move pie to the fridge to cool. Let the pie cool for at least 1 hour and up to 24 hours. Add the cool whip just before serving and enjoy your Strawberry Cream Cheese Pie!

Ingredients
  

Pie crust

  • 1 pie crust store bought or homemade
  • 1 egg
  • 1.5 tsp Demerara sugar for sprinkling

Filling

  • 1.5 cups granulated sugar divided
  • 1 cup water
  • 3 tbsp cornstarch
  • 4 tbsp strawberry Jello
  • 4.5 cups strawberries hulled and sliced
  • 12 oz cream cheese room temp

Topping

  • 4 oz cool whip

Instructions
 

Pie crust

  • Place the pie crust into the pie pan so that the edges hang over the pan slightly
  • Whisk the egg and brush it on the edges of the crust. Sprinkle the edges with Demerara sugar
  • Bake pie crust according to box directions or homemade recipe and let cool completely

Make the filling

  • Add 1 cup granulated sugar, 1 cup water and 3 tbsp cornstarch to a medium sauce pot. Whisk and bring to a boil, whisking occasionally. Let the mixture boil for 1-2 minutes while whisking
  • Add 4 tbsp strawberry Jello and let boil 1 more minute while whisking. Set aside to cool for 10-15 minutes
  • Blend room temp cream cheese and remaining ½ cup sugar with a hand mixer for 30 seconds until fully mixed and set aside
  • Hull and slice the strawberries and add to the Jello mixture, stirring until fully coated

Filling the pie

  • Spread the cream cheese mixture in the bottom of the pie crust and up the sides
  • Top with strawberry Jello mixture and refrigerate for at least 1 hour

Topping

  • Before serving top the whole pie with cool whip or each slice individually. Enjoy!

    This pie is amazing! It definitely is the perfect summer pie. Delicious! The pie was easy to make and turned out perfectly! Everyone that tasted it loved it. One person even told me my pie was “The Bomb”. If anyone out there loves strawberries and pie this recipe is a must! Thank you Krista sharing this wonderful recipe!
